Quick, Easy, and Delicious Keto Donut Holes on National Donut Day!

Today is National Donut Day, and while the traditional variety might be loaded with sugar and carbs, that doesn’t mean we can’t join in on the fun! This delicious food holiday rolls around every June to celebrate one of the most iconic treats in American food culture. From classic glazed to chocolate frosted with sprinkles, donuts have been tempting us for generations.

Don’t worry, you can still enjoy living a keto lifestyle and donuts at the same time! Here is my quick and easy recipe for keto donut holes! Just because you’re cutting carbs doesn’t mean you have to miss out on the sweet stuff.

Ingredients:

2 cups of almond flour

1/4 cup sugar-free sweetener (I use Swerve Confectioner’s)

1 cup of small curds cottage cheese

1 tsp. of vanilla

Directions:

Preheat your oven to 350°F then use cooking spray or place parchment paper on a large baking sheet. You can also use an air fryer like I did by lining the tray with parchment paper.

Add cottage cheese to a blender or food processor. Blend it until it is completely smooth and all of the chunkiness is gone.

Pour the cottage cheese into a large mixing bowl then add in the almond flour, vanilla, and sugar-free sweetener. Stir with a spoon or spatula until all of the ingredients are thoroughly combined and a thick dough forms.

Use a small scoop or spoon to scoop up the dough then roll them into balls. Place the donut holes on the prepared baking sheet or on the air fryer tray, spacing them out about half of an inch apart.

Bake for about 20 minutes in the oven (it took about 8 minutes in the air fryer), or until the tops are golden and the donut holes are cooked through.

Roll your donut holes in powdered sugar-free sweetener (I use Confectioners Swerve), cinnamon and granular sugar-free sweetener (I use Swerve granular non-sugar sweetener), or coat them in a keto glaze. To make the keto glaze, mix 1/4 cup confectioners Swerve or other brand of sugar-free powdered sweetener, 1 tsp. of vanilla, and 1 tbsp. of heavy whipping cream (add a little more if needed for the correct consistency). Mix well until a glaze forms then coat your donut holes. You can also mix up different keto options to coat your donut holes to your preferences, such as keto chocolate glaze, nuts, or peanut butter!

Store uneaten donut holes in an airtight container and store in your fridge or freezer. Just warm them up when you want a quick snack. Enjoy!
