Keto Chicken Nuggets

Makes 8 to 10 nuggets. Macros per nugget: 42 calories, 0.02 grams of net carbs, 2 grams of fat, and 6 grams of protein.

What if you could have crispy, golden chicken nuggets that taste just as good (if not better) than the drive-thru kind, without derailing your keto lifestyle? Well, let me tell you, this recipe will give you keto chicken nuggets that taste absolutely incredible! They are juicy on the inside, crunchy on the outside, and completely guilt-free. Perfect for meal prep, kid-approved dinners, or those nights when you just want comfort food without compromise!

Ingredients:

1 12.5 oz. can of chicken or 2 cups of shredded chicken (I cut up chicken that was left over from dinner the day before)

1 large egg

1/2 cup of shredded cheese (I used a mix of mozzarella and cheddar cheese)

1 tsp of garlic powder

1/2 tsp of paprika

1/2 tsp of salt

(You can also add other spices if you prefer)

Directions:

Mix all ingredients in a food processor for about 20 seconds or mix by hand until thoroughly combined.

Shape the mixture into 8 to 10 nuggets and place on parchment paper in an air fryer for about 8 minutes on 400F or you can put in oven on a cookie sheet covered in parchment paper and bake for about 20 minutes. With either method, flip halfway through to ensure they are cooked through, and they are browned on both sides.

Let them cool a bit then pair with sugar-free BBQ sauce. (I use G. Hughes Sugar-Free BBQ Sauce original)
