Makes 12 cookies. Macros per cookie: 118 calories, 1 gram of net carbs, 11.7 grams of fat, and 2.7 grams of protein.
Ingredients for the Cookies:
1 cup of almond flour
1/2 cup of powdered sugar substitute (I use Swerve Confectioner’s)
1 tsp. of pure vanilla extract or 1 capful of Jordan’s Naturally Sweetened Vanilla Bean Syrup (Here is my affiliate link and a discount code for you to use for any of Jordan’s Skinny Mixes: https://bit.ly/3GmHDTP and Code: KIMGASURAS08)
1/4 cup of butter, softened
1 oz. of cream cheese, softened
Directions:
In a medium mixing bowl, combine the almond flour, powdered sweetener, pure vanilla extract or syrup, butter, and cream cheese. Use an electric mixer on high to mix until a dough is created.
To make the dough easier to work with, you can put it in the fridge for about 40 minutes or in the freezer for 20 minutes.
Preheat the oven to 350°F.
Roll the dough out, then use cookie cutters to create your cookies in the shapes of your choice. From hearts and cupids to simple circles, this part is up to you!
Spray cooking spray onto a baking sheet to hold a sheet of parchment paper in place. You can then put the cookies onto the parchment paper-lined baking sheet.
Bake the cookies for about 12 minutes until they are cooked through and just starting to brown around the edges. Let the cookies cool down a bit, then move to a cooling rack.
You can then make your keto frosting using my Keto Vanilla Frosting recipe by clicking here!
Add in a bit of red food coloring to make pink or red icing for Valentine’s Day!
Ice your cookies, then serve and enjoy!
