Keto Peanut Butter Mousse

Makes 8 servings. Macros per serving: 288 calories, 2 grams of net carbs, 29 grams of fat, and 10 grams of protein.

Ingredients:

1 cup of heavy whipping cream

8 oz. of cream cheese, softened

1/2 cup of natural peanut butter with no added sugar (I use Smucker’s Natural Creamy Peanut Butter)

1/2 cup of powdered sugar substitute (I use Swerve Confectioners)

1 tsp. of pure vanilla extract

Directions:

Add heavy whipping cream to a medium bowl and mix with an electric mixer until stiff peaks form then set it aside.

In a separate bowl, mix the cream cheese and peanut butter together until smooth. Add powdered sweetener and vanilla, then mix until combined.

Mix the heavy whipping cream into the peanut butter mixture, then stir until completely combined.

Dole out servings in dessert dishes to share with friends and family. Enjoy!
