Cheesy Cheddar Keto Chicken and Broccoli Casserole

1 serving: 389 calories, 3.3 grams of net carbs, 31 grams of protein, 15 grams of fat

Ingredients:

1 lb. of boneless chicken breasts

1 10 oz. steam bag of broccoli or fresh

2 tbsp. of butter

6 oz. of cream cheese

2 cups of heavy whipping cream

2 cups of sharp shredded cheddar cheese

4 oz. of mozzarella cheese

1/4 cup shredded Parmesan cheese

1 tbsp. of garlic powder

1 tsp. of paprika

1 tbsp. of Italian seasoning

1 tsp. of parsley

Salt and pepper to taste

Directions:

Preheat oven to 375°F. Grease a 9-by-13 casserole dish, then set it aside.

Cook chicken breasts, then shred, or you can use a rotisserie chicken.

Cook fresh broccoli or microwave a steam bag of broccoli and drain.

Combine butter, heavy whipping cream, garlic, and half of the seasonings in a saucepan, then add softened cream cheese and stir with a whisk until thoroughly combined. Add in the cheeses, but save some of the cheddar for the topping. Cook over low heat while stirring continuously until the sauce is smooth.

Layer the shredded chicken in the casserole dish or pan, then add the steamed broccoli on top of the chicken.

Pour the cheese sauce on top of the broccoli and shredded chicken, making sure they are completely covered. Sprinkle the remaining cheese and spices on top, then bake for about 30 minutes until cheese is completely melted on top. Enjoy!
