Keto Chocolate Chip Cookies

Makes 18 servings. One cookie is one serving: 102 calories, 1.2 grams of net carbs, 10 grams of fat, 2 grams of protein.

Ingredients:

1 cup of almond flour

1/4 cup coconut flour

1 tsp. of baking powder

1/2 tsp. of baking soda

1 tsp. of salt

1/2 cup of softened butter

 1/2 cup sugar-free granulated brown sweetener (I use Swerve)

 1 egg

 1 1/2 tsp. of pure vanilla extract

 1/2 cup of sugar-free chocolate chips (I use Lily’s milk chocolate or dark chocolate chips)

1/4 cup of peanuts (optional)

Directions:

Preheat oven to 350°F then line a cookie sheet with parchment paper.

In a medium bowl, whisk together the almond flour, coconut flour, baking powder, baking soda, and salt then set aside

In a large mixing bowl, mix together the softened butter and brown sugar-free sweetener with an electric mixer until it is fully combined. Mix in the egg and vanilla. Add in the dry ingredients then add in the sugar-free chocolate chips (and peanuts for extra protein but they are optional).

Spoon about one tablespoon of the batter per cookie onto a cookie sheet, spacing them an inch or two apart. Flatten each ball of dough then bake in the oven for about 8 minutes or until they are no longer doughy.

Leave cookies on cookie sheet for about five minutes as they cool then enjoy these amazingly delicious cookies!
