Keto Strawberry Shortcake

Makes 4 servings. 1 serving is 1 cake: 365 calories, 6 grams of net carbs, 32 grams of fat, 10 grams of protein

Ingredients:

1 large egg

1/4 cup of sour cream

1 tsp. of pure vanilla extract and 1/2 tsp. of liquid Stevia, or 1 1/2  tsp. of Jordan’s Naturally Sweetened Vanilla Bean Skinny Syrup (Link and customer code for 10 percent off:  https://bit.ly/3GmHDTP KIMGASURAS08

1/2 tsp. of salt

1 cup of blanched almond flour

2 tsp. of baking powder

Ingredients for the Filling and Topping:

12 medium ripe strawberries

3/4 cup of heavy whipping cream

1 tsp. of vanilla extract and 1/4 tsp. of liquid Stevia (Or, you can also add a 1 1/4 tsp. of Jordan’s Vanilla Bean to replace the vanilla extract and liquid Stevia)

Directions:

To make the cakes: Preheat your oven to 350°F. Line a baking sheet with parchment paper.

Whisk together the egg, vanilla and liquid stevia or Vanilla Bean Naturally Sweetened Jordan’s Skinny Syrup, sour cream, and salt in a medium bowl then use a spatula to mix in the almond flour and baking powder.

Using a large scoop or spoon, put 4 heaps of the dough onto the baking sheet. Flatten the tops then bake for about 15 minutes until the cakes are golden brown. Put the cakes on paper towels on a plate to cool down then put them into the fridge to chill.

To make the filling and topping: Cut two of the strawberries in half to top each cake then cut the rest into small slices.

Mix the heavy whipping cream, and vanilla and stevia (or Jordan’s Syrup) with an electric mixer or you can use a food processor on high until the mixture becomes a whipped cream. Carefully slice each biscuit in half horizontally then arrange strawberry slices on top and around the bottom half of each cake. Spoon about 1/4 cup of whipped cream on top of the strawberries then put the other half of each cake on top. Finish with another spoonful of whipped cream on top with the halved strawberries then serve. Enjoy!
