It is National Nutty Fudge Day (May 12th every year) and to celebrate, here is a quick and easy recipe for nutty keto chocolate peanut butter fudge! This recipe can be changed up to feature keto white chocolate chips if you prefer. Also, I use peanuts, but you can use most other types of nuts including walnuts and almonds, but you may need to refigure the macros.
Quick and Easy Three-Ingredient Nutty Keto Chocolate Peanut Butter Fudge
This recipe makes 12 servings. One serving: 182 calories, 3 grams of net carbs, 6 grams of protein, and 16 grams of fat.
Ingredients:
1 cup of keto chocolate chips (I use Lily’s brand)
1/2 cup of low sugar peanut butter (I use Smucker’s Natural Peanut Butter)
1/2 cup of peanuts (or other nuts of you choosing)
Directions:
Spray a small square pan with cooking spray to hold a piece of parchment paper in place.
Put the chocolate chips and peanut butter in a bowl that is safe for the microwave. Place in microwave for 30-second intervals while stirring each time until the chocolate chips are completely melted. Stir the mixture well until it is fully combined.
Stir in peanuts to the mixture then pour into the pan you lined with parchment paper then put in the fridge or freezer. Leave in until firm.
Cut into small squares then serve them to others or keep them in a sealed container in the fridge to indulge when you have a sweet craving. They will keep for about four weeks in the fridge and six months in the freezer.
