Today, April 3, happens to be National Chocolate Mousse Day!
I remember going on a field trip when I was a freshman in high school with my French class to a pretty high-end French restaurant in Columbus (Ohio), about an hour away from our school. We had two full meal options to choose from during the weeks before the trip. I chose the one with Coq au Vin (chicken in a wine sauce over rice) with French onion soup and, you guessed it, chocolate mousse for dessert! It was delicious and I am so excited that there are keto options for so many of the foods we love!

Ingredients:
3 ounces cream cheese, softened
1/4 cup of powdered zero-calorie sweetener (I use Swerve Confectioners)
1/2 cup of heavy cream
2 teaspoons of pure vanilla extract
2 tbsp. of unsweetened cocoa powder
Dash of salt
Directions:
Use a mixer on high speed to whip the cream cheese until it is soft and fluffy.
Turn mixer down to a lower speed then add in the vanilla and heavy cream. Beat until smooth, then add in cocoa powder, salt, and sweetener. Mix on high until smooth and creamy.
You can dish it up and serve it right away or stick in the fridge until later. Garnish with keto whipped topping or berries if you prefer. Enjoy!
