Makes four servings, one wedge equals one serving. Macros: 84 calories, 3 grams of net carbs, five grams of fat, 4 grams of protein.
This salad is one of my favorites. It is not only quick and easy to make, but also delicious! It makes a great side with dinner or it can be a meal all on its own.
Ingredients:
- 1 head of iceberg lettuce
- 4 strips of regular or turkey bacon chopped and cooked until crisp
- 2 tbsp. of red onion thinly sliced
- 1/2 cup cherry tomatoes halved
- 1/2 cup of feta or blue cheese crumbles
- 1 cup of keto salad dressing
Directions:
Cut the iceberg lettuce into four wedges and plate each one separately.
Chop bacon then cook until it is crisp on the stove or in an air fryer.
Top each lettuce wedge with about 4 tbsp. of your favorite keto salad dressing (I use Ranch or Blue Cheese), 1/4 of the chopped bacon, 1/4 of the blue cheese or feta crumbles, and 1/4 of the tomatoes and onion, until all four wedges are ready to serve. Enjoy!
