Chocolate Chip Peanut Butter Balls

Makes 24 servings and one ball is equal to one serving. Macros: 82 calories, 1 gram of net carbs, 9 grams of fat, 1 gram of protein.

There are so many choices when it comes to fat bombs, but the peanut butter options are my favorites. These are great for a snack to curb hunger in between meals and to increase your fat intake for the day. Also, you can keep them in the fridge in an airtight container for up to a week or freeze them for up to a month!

Ingredients:

  • 1/2 cup of low carb peanut butter (I use Smucker’s Natural Peanut Butter)
  • 1/2 cup of softened butter
  • 1 to 2 cups of powdered sweetener to your preferences
  • 1 teaspoon of pure vanilla extract
  • 3/4 cup of sugar-free chocolate chips (I use Lily’s Milk Chocolate Chips)

Directions:

Add all of the ingredients except the chocolate chips to a mixing bowl then beat with an electric mixer until a dough is formed. Mix in the chocolate chips by hand then form batter into 24 balls.

Line a baking sheet with parchment paper then place the balls onto the baking sheet. Put into the refrigerator for at least an hour so the balls can fully form. Enjoy!
