These cauli-tots are a great substitute for tater tots and pair very well with several main dishes, including a juicy cheeseburger or even a steak. These tots also make a great snack in between meals.
Ingredients:
- 10 or 12 oz. package of frozen riced cauliflower
- 3/4 cup of cottage cheese
- 1/4 cup of shredded mozzarella cheese
- 1/4 cup of cheddar cheese
- 2 tbsp. of grated parmesan cheese
- 1 tbsp. of garlic powder
- 1/4 teaspoon salt or sea salt
- 1/4 teaspoon of pepper
Directions:
Preheat your oven to 375°F. Spray water or cooking spray on a baking sheet to hold a sheet of parchment paper in place.
First, it is a good thing to pour the frozen cauliflower rice into a heated non-stick pan and stir occasionally until most of the water in the cauliflower has evaporated. This should give you fluffier rice while getting rid of that strong cauliflower smell.
Blend cottage cheese in a blender, or a food processor, to make it creamy and smooth. Pour into a large mixing bowl then add the cauliflower rice and all other ingredients. Mix well.
Shape one tsp. of the mixture into the shape of a tater tot then place on the parchment paper-lined baking sheet about 1 inch apart.
Bake for about 28 minutes or until your cauli-tots are golden brown. Let them cool for a bit then serve as a snack or a side dish. Enjoy!
