Bursting with rich Italian flavors, this satisfying one-pan meal combines seasoned ground beef, tangy marinara or pizza sauce, gooey mozzarella, and tender riced cauliflower for a low-carb twist on classic comfort food. Best of all, you can put it together in less than a half an hour with minimal prep and cleanup—ideal for busy weeknights!
Ingredients:
- 1 lb. of ground beef
- 1 cup of Rao’s marinara or pizza sauce
- 1 cup of shredded or grated mozzarella cheese
- 1 cup of shredded or grated pizza cheese mix
- 12 oz. package of frozen riced cauliflower
- 1/4 cup of beef broth
- 1/2 cup of chopped onion
- 1 tsp. of garlic powder
- 1 tsp. of oregano
- 1 tsp. of pepper
- 1 tsp. of salt
- Optional: Pepperoni topping
Instructions:
Preheat the oven to 375°F.
Add spices to your ground beef and onions in an oven-safe pan then cook over medium heat. After the mixture is fully cooked, drain off the excess grease.
Steam the riced cauliflower in the microwave according to the instructions on the package (usually about five to seven minutes) then drain excess moisture. Stir it into your ground beef mixture.
Stir in the marinara or low-carb pizza sauce into the ground beef mixture along with the beef broth. Bring it to a simmer then let it cook, uncovered, for about 10 minutes or until the sauce thickens.
Sprinkle the pizza mix and mozzarella shredded cheese over the top then place the pan in the oven for about five minutes while the cheese melts. (If you want to brown the cheese, you can then broil for a minute or two).
Take your pan out of the oven and dish it up for your family and friends. You can serve alone with a side salad and keto-friendly dressing. Enjoy!
